I believe I know what you are seeking and I have many b&w photos taken with Canon Powershot on trips where I chose a color to appear in all black & white photos. Examples.. red roses in a church (b&w), Coca-cola red in a park full of booths sponsoring a local festival (b&w).
These are really cool compositions but were all designed prior to shot and not during processing. Seems like this would be easy feature too in this sophisticated software. If you find out how, I would love to know as well. I find this an outstanding artwork for my work.
